How to Peel Tomatoes

1.  Bring a large pot of water to a boil, fill a large bowl with ice and cold water to Blanch and shock the tomatoes. While the water is heating up Wash your tomatoes then using a paring knife cut a shallow X on the bottom of the tomatoes.
2.  When the water is boiling, working in batches of four, plunge the tomatoes into the boiling water for 30 second to 1 minute.
3.  Once the skin on the tomato starts to wrinkle or pull apart remove them quickly and gently with a slotted spoon and transfer them to the ice water for few minutes or until they are completely cold.
    4.  Grab the skin of the tomato and pull it off, should just slip off easily    

Cook's Notes

  • If you want to take the seeds out just cut each peel tomato horizontally in half, hold tomato and give a  gently squeeze and push out the seeds.    

  • Store tomatoes at room temperature and in indirect light, tomatoes are tropical fruit and storing them in the fridge will change their flavor and over-ripe tomatoes will go soft more quickly in the refrigerator then room temperature.

  • Great companions for tomatoes: Mint, parsley, oregano and cilantro.
